In the middle of busy days filled with work and plans, take a little time away from the everyday and enjoy a slow meal.
Hitoiki is a small restaurant made for that moment of pause.

Our course is available from 9:00 a.m., beginning with a glass of white wine for a slightly special start to the day.

A quiet space with only nine seats. Come alone or with someone and enjoy your own time without worrying about the people around you.

Fermentation brings changing layers of flavor through koji, miso and shio-koji. Aging deepens the umami and aroma of ingredients over time. At Hitoiki, we bring this “time of flavor” into our cooking.
At Hitoiki, we select ingredients and seasonings from across Japan.
We choose them not simply because they are good, but because of how each one comes alive in our cooking.
Founded in 1897, the brewery continues its traditional long-aged brewing methods.
Hitoiki uses its shio-koji, aged miso, tamari soy sauce and amazake.
Founded in 1826, Fukujyu Shoyu continues to preserve traditional brewing methods.
We source mirin, vinegar, soy sauce and sudachi soy sauce from the brewery.
For salt that gives each dish its shape and balance, we use salt made in a traditional salt field and aged over time.
We use freshly prepared chicken, allowing the natural flavor of the meat to shine.
We select female Omi beef round and prepare it as dishes such as our seared Omi beef.
“Suppin Tofu” from Kyuzaya, a long-established Kyoto tofu maker. We value the natural flavor of the tofu itself.
Baguette from Brian, headquartered in Kitayama, used for dishes such as our fermented garlic toast.
Used as a finishing touch to bring the aroma of sansho and a lingering finish to the dish.
Made in Italy’s Marche region from wheat grown by Mancini itself.
A premium pasta loved by chefs at many Michelin-starred restaurants.
Four years ago, I became a single parent.
I thought raising a child was joyful.
I thought the ordinary days were happy ones.
But after stopping twice, I realized something.
Even within those happy days,
stress had been quietly building without me noticing.
There are things in life we only notice when we stop.
I realized that taking a breath
is important in life, too.
So I asked myself: what can I do?
Not simply cook food.
I wanted to create a place where,
even for a little while, as many people as possible could feel a bit better.
I wanted to make food that could bring a smile.
So I decided to create that place myself.
Not just coffee. Not just a morning meal.
A place where you can choose a drink, even in the morning.
Food you can find nowhere else.
Drinks you can find nowhere else.
A space you can find nowhere else.
A place shaped by people's thoughts,
and touched by many people's “breath.”
That is Hitoiki.
We open from 9:00 a.m. because
we want you to have a little time for yourself,
with white wine and food if you wish.
Alone is fine.
Coming with someone is fine, too.
In the middle of a busy day,
we hope you can stop for a moment and take a breath.
And after eating, perhaps think,
“Somehow, today feels a little happier.”
That wish is what led to
“Shifuku no, Shiro.”
A one-of-a-kind dish at Hitoiki,
beginning with tofu.
From 9:00 a.m. to around noon.

French techniques with an Italian touch.
Layered with Japanese umami.

Raise a wine glass and toast together.

We want children to enjoy the simple pleasure of dining out together with the adults.
Choose a drink served in a wine glass. A toast together can make an ordinary meal feel a little more special.
We also have a few toys for young children. Families are very welcome.
A plate centered around a plain omelet, cooked to order with care.
A small dish to enjoy together with the adults.
Choose a white from today’s selection to complement your food.

A special white for special occasions. Selection changes by day.
Light fruit character and easy to drink.
Letting time deepen the flavor.
